Only sell poor quality (gray description color) items to a vendor. Items of common or better qualities (white, green, blue, purple, etc.) that are not soulbound typically sell for much more on the auction house than you will get from a vendor.
All the gathering professions are useful. Herbs from herbalism, ores and bars from mining, and leathers from skinning will sell for very nice sums on the AH. And the higher your level gets, the better ores, herbs, and leathers you're able to gather and the more gold you'll be able to sell them for. It is highly recommended to pick up two gathering professions for your first character, as crafting professions tend to require a large gold investment to level and don't usually return a profit until leveled really high. You can always drop one or both of your gathering professions later once your WoW financial situation improves.
While working on stocking your gold pile, keep a running list of how much things are going to cost you (flying levels especially). This helps you keep track of how much gold you'll need so that you know how much to save and don't go spending it on things you don't need immediately.
